Is there anything to be done about being fire by boss wife for no reason and then she told everyone I quit, I just found this out and it's been about 2 years but still struggling as a single mom?

Unfortunately, because it has already been 2 years, there probably isn't anything you can do with respect to your termination. While claiming you quit (when you were actually fired) is not accurate and thus potentially defamatory, the time period to bring that claim is also one year, and it would be VERY hard to prove any type of damage in such a situation.
